Västerbotten Pie

"Västerbotten pie" is a classic Swedish savory pie made with Västerbotten cheese.

Ingredients

Pie Crust:

  • 100 g butter
  • 150 g all-purpose flour (2.5 dl)
  • 2 tbsp cold water

Filling:

  • 200 g Västerbotten cheese, coarsely grated
  • 2 eggs
  • 2 dl milk (or heavy cream)
  • Salt

Instructions

Pie Crust:

  1. Chop or process together butter and flour into a crumbly texture.
  2. Add water and quickly mix into a dough.
  3. Press the dough into a pie dish, approximately 24 cm in diameter, and refrigerate for 30 minutes.
  4. Prick the pie crust with a fork and pre-bake it in the middle of the oven for about 10 minutes. Allow it to cool.

Filling:

  1. Distribute coarsely grated Västerbotten cheese over the pie crust.
  2. Mix eggs, milk, salt, and pepper. Pour it over the cheese.
  3. Bake the pie in the middle of the oven for about 30 minutes.

Serving suggestion:
Serve the Västerbotten pie with a mixed salad.
